SANDRA’S GREEK CUCUMBER TOMATO and GOAT CHEESE SALAD

A perfect salad that transports very 
well to your favorite functions ~ 
And, its oh so delicious...
Servings: (4)
Prep: 15 Mins.
+ refrigeration time

INGREDIENTS

***Salad:
1 english cucumber, rinsed, peel scored with a fork, and cut into ½” cubes
½ red bell pepper, seeded, deribbed, cut into ½” pieces
1 large tomato, cut into ½” cubes
¼ of an red onion, chopped
1 (2.25 oz. can) sliced black olives, drained (and/or pitted calamata olives)
1/4 cup, goat cheese, cubed

***Vinaigrette:
4 tablespoons, extra virgin olive oil
2 tablespoon red wine vinegar
Sea salt and freshly ground pepper, to taste
1 teaspoon dried oregano

***Bread croutons:
1 slice of bread
½ tablespoon extra virgin olive oil
½ teaspoon garlic powder
1 teaspoon dried parsley

METHOD

In a medium bowl, combine cucumber, bell pepper, tomatoes, onion, olives, and goat cheese.

In a small bowl, whisk vinaigrette with olive oil, red wine vinegar, oregano, sea salt and pepper, to taste.  Combine with vegetables and let stand for 30 minutes before serving.

Meanwhile, to make the croutons, heat a medium nonstick skillet with the olive oil to medium-high heat, and sprinkle them with garlic powder, and parsley.  Saute the croutons, until crispy, for about 5 minutes, and set aside.

Once the Greek Salad has been refrigerated for 30 minutes, serve equally amongst four salad plates, and top with croutons. – Enjoy!

Tips:  I most successfully cube my goat cheese using dental floss vs a knife.  Also, if you are using a regular cucumber, please peel and remove seeds before cutting it into cubes.

Custom Fit Meals Review and Promo Code

As a Paleo practitioner for three-ish years, Ive come across countless rounds of people who have told me they were going to give the Paleo lifestyle a try, only to throw in the towel a few days in because they couldnt keep up in the kitchen. And also because, like Lindsay Lohan, they just couldnt turn down an opportunity to get white girl drunk. Either way, they probably would have been a lot more likely to stick with their newfound healthy lifestyle if they had a live-in chef...or maybe just Custom Fit Meals.

Custom Fit Meals is a meal-order delivery service specializing in Paleo, Primal, and otherwise "clean" eating ready-to-eat meals. Ive told you about another similar meal-order business before here, but this one is a bit different because you actually get to choose the meals you want as opposed to just getting whatever is provided from a pre-determined menu. Not only that, but they only use grass-fed beef, free-range poultry, pastured pork, and organic local produce! PLUS, they have breakfast!! Im sure a lot of you are all like "breakfast is the easiest to take care of, lazy!" but SCREW YOU! I wanted to be able to order my breakfast just as I would my lunch or dinner, and with CFM I can, so suck it!

But none of that matters if the food isnt good, so I took one for the team and tried a few dishes for you. Ive created a completely arbitrary rating system for basically no other purpose than to use my face as scale, so make of it what you will! 

First up, breakfast. 

This is Bacon, Eggs, and sweet muffins:
Ill say this--their presentation isnt necessarily gorgeous, but they do what they can I guess. Presentation aside though, this was DELICIOUS! The sweet muffins were more like sausage cups filled with sweet potato mash, which was great, just not what I expected. The eggs were fluffy and not the least bit overcooked or rubbery, which I was initially worried about. And even though they were covered in bell peppers (one of the only foods I truly hate), I still thought this was an excellent breakfast.

The Breakfast Bowl

Another breakfast, this time, plated on a dish which made for a much prettier meal:
Again, every bite of this was fantastic--the eggs perfectly cooked, the sausage excellently seasoned and a delicious gravy, which there sadly wasnt enough of IMO since it pretty much got absorbed by the sausage after I microwaved it. The thing that really impressed me about this (and every other meal I ate) was how well seasoned, without being salty, everything was.

Sweet Potato Pancakes
Yall, I was enjoying my meals so much that sometimes, I just forgot to take pictures with my good camera, so youll have to settle for a few iPhone pics here. This was the breakfast I was looking forward to the most (Sweet Potato Pancakes?!?!?), but it was not at all what I was expecting. Maybe they mislabeled my meal, but the only sweet potatoes were in mash form, dotted with raisins. Delicious, yes, but pancakes? No.

Lets turn our attention to the lunches/dinners.

Chicken Pot Pie
I was highly skeptical of this before taking a bite. The chicken I was used to from the other meal delivery service was usually really dry, so I was expecting the same experience. I was happily surprised from bite one when the chicken was tender and moist and well seasoned throughout. Plus, the cinnamon sweet potato topping was a delicious accompaniment to the savory chicken filling! Winner, winner, chicken pot pie dinner!

Mango Chicken Salad On-the-Go
This was one of my favorites of the whole week! The chicken was perfectly cooked again, but the fruity and slightly sweet dressing on the salad was exactly what I was in the mood for that day for lunch. Plus, the fact that its served chilled makes it easy to eat on-the-go. (Can you believe I only just now figured out that reference in the name...??)

Spaghetti Bolognese
Im not a big spaghetti squash fan in general, which is why this is one of my all-time favorite recipes. But I do love a good bolognese and was eager to see how CFMs would be. Not even the spaghetti squash could slow me down eating this. Another perfectly seasoned dish and hearty portion to boot! Generally, I finish a meal with several good bites left and hand it to Kyle to eat my "trash," but there was nary a morsel left when I was finished, it was that good.

Buffalo Chicken Salad On-the-Go
Another iPhone shot of my half-eaten meal, another cold lunch. This time, it was a buffalo chicken salad served over a carrot and jicama slaw. The spicy/sweet combination was delish. I was also impressed with how well the slaw held up--it wasnt watery at all!

RATING:  and a half

This was by far the tastiest meal-order system Ive ever tried, and given the--what I think is reasonable price because I shop almost exclusively at Whole Foods--price ($100 for 10 meals), its a total no-brainer! The only thing you have to worry about is whether they deliver to your hood, which you can check here (make sure youre not using Google Chrome. I know...the one downside of the whole thing).

Purple cabbage and Cauliflower Noodles

I love noodles however you cook. My hubby is not a very big fan of noodles but yesterday night the delicious smell of this noodles tempted my hubby. I just prepared and gave him hot hot from the pan and he finished it in no time. I did not prepare any magical recipe, I just made a simple one with out any janjat(I mean to to say that I simplified the recipe, with limited ingredients) and made to Indian taste. I really loved this kind of non spicy and simple version, it is healthy and perfect for late night dinner.

Ingredients
Noodles(Spaghetti)- boil with little salt and soaked in cold water-1 cup
Purple Cabbage chopped to long thin slices-1/4cup(you can use regular cabbage too)
Cauliflower florets-1/4cup
Tomato puree-4tbsp
Salt to taste
Red chili powder-1/4tbsp
Pepper powder-1/4tbsp
Aginamoto-pinch(optional)
oil-1tbsp

Method:
Heat 2tbsp of oil in a skillet and add onions and cook for 1min under medium flame, then add Purple cabbage, cauliflower and little salt and mix well. Keep sauteing till all vegges get cooked. Then add Tomato puree and mix well. Check for taste add red chili powder,aginamoto, pepper powder and salt to your taste and keep in mind that you already added salt to noodles while boiling. When the raw smell in tomato goes away then add Noodles and mix well. Saute till the noodles are warm and serve hot with the sauce you like.

Additional tips:
You can make this recipe more rich by adding soy sauce-1/2tbsp, chili garlic sauce-1/2tbsp and vinegar-1/4tbsp. You can also add other veggies such as carrot, batani/green peas etc.,If you wanna make egg noodles just whisk egg and add it to the side of the skillet when the egg is completely cooked them mix with other ingredients. I think adding cooked meat will be a bad chooice. It does not taste good with cabbage(well its my opinion it is up to you!)

Thin Crust Pizza with Italian Sausage and Fresh Garlic


Homemade pizza is one of those things can be a bit daunting to make, at first.  However, once you find an easy pizza dough recipe the possibilities are endless.  I generally make this pizza dough, which is indeed very simple, once every couple of months, cut it into 4 servings, eat one that night and freeze the other three for use at a later time.  Since last night was one of the those later times, I removed the frozen ball of dough from the freezer Friday night and let it thaw in the refrigerator.  About 1-2 hours before its time to eat, I remove the dough ball from the refrigerator and place it in an olive oil coated bowl and allow it to come to room temperature.

Meanwhile, I made the pizza sauce.  To a cold sauce pan, I added about 2 tablespoons of olive oil, 1/2 teaspoon red pepper flakes and 1 whole, but smashed garlic clove.  Turn on the heat and allow the oil and garlic to come up to temperature while infusing the oil with the garlic flavor.  Remove the garlic and discard when it turns a deep golden brown.  Add a can of diced tomatoes to the garlic infused oil, 1 tablespoon of dried oregano, 1 teaspoon of sugar, and salt and pepper.  Cook at a medium simmer until the the sauce is thick with a luscious coating of olive oil floating on top.  Remove from heat and let cool. 

When the dough has come to room temperature press it out to about 1/4 inch thick and place on a baking sheet that has been coated with corn meal.  Spread the tomato sauce sauce over the dough and top with any ingredients that you enjoy. I sliced a hot italian sausage very thin, shredded some mozzerella cheese, grated parmesan and thinly sliced a clove of garlic and evenly distributed all over the top of the pizza. Brush the crust with olive oil.  This pizza cooked in a 500 degree oven for about 10 minutes until the cheese was melted and the crust was crispy and golden brown.

Spiced Rhubarb and Lemon Muffins


Its still Rhubarb Central here! This time Im bringing you some Spiced Rhubarb and Lemon Muffins.  This is a classic combination with the spices including cinnamon and little pieces of crystallised ginger.  I decided to make these when I saw the Recipes for Life Challenge at Vanesthers Bangers and Mash blog. The rules of the Recipes for Life call for a trio of ingredients, and this month they are rhubarb with lemon and spice. A monthly winner  will be picked and the best of the recipes will be included in a new charity cookbook to be published by SWALLOW later this year.

 

Spice Rhubarb and Lemon Muffins
150g light brown sugar
1 tbsp sunflower oil
1 egg
1 tsp cinnamon extract (or 1/2 tsp ground cinnamon)
100ml milk
100g finely diced rhubarb
175g wholemeal flour
1 tsp baking powder
1 tsp bicarb soda
1/2 tsp ground ginger
pinch salt
50g chopped ccrystallised ginger
grated zest of half a lemon

1.  Preheat the oven to 200C.
2. Line you muffin tin with paper cases.
3. Place 125g of the sugar, oil, egg cinnamon extract and milk.  Mix together and add the rhubarb.   

  

Wet ingredients
4. Sift your dry ingredients into the bowl, add the wet ingredients and stir until combined but dont over mix or your muffins will be heavy.
Dry ingredients
5. Spoon the mixture into the cases, filling about 3/4 full. 
6. Sprinkle the tops of the muffins with the remaining sugar (I forgot to do this!)
7. Bake for 18-20 minutes.
8. Leave in the tin for 5 minutes before transferring to a wire rack.


Cakey, fruity gingeryness!
What I really liked about these muffins was that they were really moist, the acidity of the rhubarb and the lemon took the edge off the sweetness and the combination of ginger and cinnamon worked really well with the fruit.  Best of all were the little nuggets of intense crystallised ginger.
