Pepper Chicken Soup recipe


This is a perfect soup for winter and rainy days. Both Chicken and Black peppercorns are used for treating common colds. My granny makes this soup for treating cold and coughs. It can be prepared in few mins and tastes delicious. I make this soup as starter or as snack, usually I serve this soup along with rice papad.

Pepper Chicken Soup
Ingredients
Chicken with bones-250 gms
Tomato( chopped)-1 no
Onion( sliced)-1 no
Garlic cloves sliced- 2 nos
Curry leaves and Coriander leaves- few
Black pepper powder-1 1/2 tsp
Coriander powder- 2 tbsp
Fennel powder-2 tsp
Turmeric powder-1/4 tsp
Salt to taste
Oil-1 tsp
Water- 3 cups
Chicken Pepper Soup
Method
Heat 1 tsp oil in a pan when oil is hot add the sliced onion, garlic and curry leaves, saute for few seconds. Now add the cleaned chicken pieces to the pan and saute until chicken turns pale white. Next add the chopped tomato, black pepper powder, coriander powder, fennel powder, turmeric powder, salt and water. Stir everything well and cover pressure pan with lid. Pressure cook the chicken soup for 7 mins. Finally check the soup for salt and garnish with chopped coriander leaves, serve hot.

Pepper Vegetable fry


Sometimes my husband cooks for me and this is one of his tastier preparation. Its so simple to prepare but i was astonished by the taste. When you go on eating spicy and cheesy foods take a break for fresh vegetables seasoned with salt and pepper.





Ingredients


Carrots (chopped lengthwise)-1cup
French beans (chopped lengthwise)-2cups
Peas-1cup
Broccoli (tiny florets and stems)-1/2cup
Cauliflower (tiny florets and stems)-1/2cup
Onion medium (thinly sliced)-1
Olive oil-1tsp
Salt and Pepper to taste



Method


Heat oil in a wok add all the vegetables one by one and stif fry for 5 mins. Do not over cook the vegetables they should be crunchier. Season with salt and pepper, serve hot with toasted Bread or Chappati or Tortillas or Rice goes well with anything.

Lemon pepper chicken and asparagus

I do this meal in my toaster over so I use a small baking sheet, covered in tinfoil and spray with nonstick spray. Place a handful of asparagus , and chop some white onions to place with asparagus then place chicken breasts on top. Top generously with lemon juice, salt and pepper and cook at 350 degrees for about 30 minutes. Brown rice makes a wonderful side. Enjoy! P.S. This isnt the best picture, it really tastes great!

How to make Simple Spicy Salt n Pepper Shrimp

 Simple Salt and Pepper Shrimp







Easy and delicious recipe! This dish for the shrimp lovers with a special kick of jalapenos.



Ingredients 

1 lb. of shrimps deveined
1/3 cup of finely diced ginger
2 seeded and diced jalapenos
2 seeded and diced red sweet peppers
1/3 cup of diced onion
3 tablespoons of coarsely chopped cilantros
3 tablespoons of chopped green onions

1 teaspoon of salt
1 teaspoon to ground black pepper
3 table spoons of granulated chicken stock or MSG
1 teaspoon of sugar
4 tablespoon of olive oil divided

In a medium pan on medium heat, add 2 table spoons of olive oil, ginger and garlic until its about to brown. Then add the onions, stir until half way cooked then add in the peppers. Set it aside off the heat. On a large skillet on medium heat add about two more table spoons of olive oil then align shrimp to cook. sprinkle on the salt, black peppers, chicken granulate or msg and sugar. Add the stir fry veggies on top of the shrimp  and stir it a couple more times. Turn off the heat and add the green onions and stir it once more. Place it on a serving platter and sprinkle the cilantro on top. Serve with a side of jasmine rice.

Elbows with Red Pepper Sauce

Ingredients:
· For sauce
1.      1 red capsicum
2.      1/2 carrot
3.      1 big red onion
4.      1 big tomato
5.      1 tablespoon olive oil
· For pasta
1.      1 cup uncooked elbow pasta
2.      2 tablespoon olive oil
3.      1 tablespoon chopped garlic
4.      1 teaspoon paprika
5.      7 to 8 olives
6.      1/2 cup chopped sweet basil
7.      1/4 cup shredded green capsicum
8.      Salt to taste
9.      Oregano
10.  Parsley
11.  Parmesan cheese
Method:
1.      Fill a big pot with water and bring the water to a boil add elbow pasta and salt.
2.      When the pasta is cooked remove in strainer. (Make sure don’t over cook it should be tender but not overly soft or mushy.)
3.      Cut red pepper, carrot, onion and tomato into big size chunks.
4.      In pan heat the oil add in red pepper and sauté for 2 minutes or until little brown.
5.      Now add carrot and onion and sauté for 2 to 3 minute.
6.      Add tomato and cooked for few second.
7.      Remove this in mixture jar and make puree.
8.      Heat the oil in a pan; add garlic and sauté for few second.
9.      Add in red pepper puree and simmer over medium heat.
10.  Simmer until slightly thickened. Add in oregano, parsley, salt and basil.
11.  Cook for 1 minute than add olive, parmesan cheese, green capsicum and elbow pasta.
12.  Mix well serve with grated cheese.
