Spaghetti Marinara with Meatballs

A simple and delicious marinara sauce served over steaming spaghetti with meatballs!  One of my favorite dinners because, to me, it is the definition of comfort food. It makes you feel good, like you have accomplished something when you have finished making it. Bonus, is that it gives you so much food for the money.  I purchased 1 lb. of ground chuck, which was on sale for about $2.94/lb, from which I made 4 golf ball sized meatballs and froze the other 1/2 lb. for another use.  Plus 1 pound of pasta which is about $1.00 and a can of tomatoes which is about $1.89, except that I scored a rare can of actual San Marzano DOP certified tomatoes.  Even using the Rolls Royce of tomatoes, I still only shelled out about $5.00.  

To make this versatile marinara sauce start with a large sauce pan, cold, and about 1/4 cup of olive oil and 1-2 minced cloves of garlic.  Add the garlic to the cold olive oil in the cold pan and then turn on the heat.  Allowing the garlic to come up to temperature really infuses the oil with the garlic flavor.  I also like to add about 1/2 - 1 teaspoon of hot pepper flakes as well, but thats optional.  After the garlic begins to sizzle, but before it turns brown, add 1 large can of whole tomatoes.  I like to use a potato masher to break up the tomatoes, but you can also squeeze them between your fingers, which is kind of fun too, or poke them with a fork.  Add 2 teaspoons of salt, 1 tablespoon of sugar and a grinds of fresh cracked pepper.  Let simmer for about 15-20 minutes, or until it has reached the proper consistency, and remove from the heat.  Stir in about 1/2 cup of chopped fresh basil and you have a fabulous all-purpose marinara sauce.  

The meatballs start with 1 pound of ground beef in a large bowl.  To the ground beef add 1 clove minced garlic, a few tablespoons of finely chopped onion, 1 teaspoon Worcestershire sauce, 1/4 cup chopped fresh parsley, 1/4 cup fresh grated parmesan cheese, 1 egg, 1/4 - 1/2 cup bread crumbs and salt and pepper to taste.  Combine well, but be careful not to overwork the meat which will cause it to become dense and dry.  Place meatballs on a baking sheet and cook in a 375 degree oven for about 20-30 minutes.  Turn the marinara sauce back on and bring to a simmer.  Remove the meatballs from the oven and place in the marinara sauce to finish cooking or for just another 10 minutes or so.  Serve over the pasta of your choice and top with freshly grated parmesan cheese.

Fried spaghetti fingers


Ingredients
  • Spaghetti boiled 2 cups
  • Potato boiled and mashed 1 cup
  • Tomato paste 2 tbsp
  • Onion chopped 2 tbsp
  • Egg yolk 1
  • Salt 1 tsp
  • Black pepper 1 tsp
  • Crush red pepper 1 tsp
  • Lemon juice 1 tbsp
  • Coriander leaves 2 tbsp
  • Green chilies 2 chopped
  • Egg beaten 1
  • Flour for coating
  • Bread crumbs for coating
Method
  • Cut spaghetti into pieces and boil till tender.In a bowl mixed boiled spaghetti, boiled and mashed potato, tomato paste, onion, egg yolk, salt, pepper, crushed red pepper, lemon juice, coriander leaves and green chilies.
  • Shape the spaghetti mixture into fingers .Roll in flour, dip in eggs, dredge in crumbs, shallow fry. Serve with ketchup.

Spaghetti Cheese Cake


Ingredients
  • Butter 2 tbsp
  • Bread crumbs ½ cup
  • Boiled spaghetti 1 packet
  • Milk ¼ liter
  • Flour (roasted) 2 tbsp
  • Oregano ½ tsp
  • Parsley chopped ¼ bunch
  • Egg 1
  • Cheddar cheese 100 gm
  • Mozzarella cheese 50 gm
  • Salt to taste
  • Black pepper ¼ tsp
  • Oil 2 tbsp
  • Onion chopped 1
  • Tomatoes boiled 2
  • Tomato paste 2 tbsp
  • Tomato ketchup 2 tbsp
Method
  • Grease cake mold with 2 tbsp butter, then sprinkle ½ cup bread crumbs and keep aside.Put milk in a wok and cook till it comes to a boil, add oregano, chopped parsley, a little salt and black pepper. Thicken sauce with roasted flour. Then Remove from fire.In other pan boil water as required, break spaghetti into small pieces and add to the boiling water, when the spaghetti is a little tender remove in a strainer, then cool with fresh water.Now mix the boiled spaghetti with a little white sauce, add in 100 gm grated cheddar cheese and 50 gm grated mozzarella cheese.Add spaghetti to the greased cake mold, spread a little bread crumbs on top.Now bake in a preheated oven on 200 degrees for 12 – 15 minutes.Separately heat 2 tbsp oil in a pan, add in 1 chopped onion and sauté till soft.Add 3 ground tomatoes, 2 tbsp tomato paste, 2 tbsp tomato ketchup and salt to taste. Cook on low flame for 12 – 15 minutes.Now remove spaghetti cake from mold, put on a serving platter.Spread prepared sauce on top and serve.

Ingredients
  • Oil 2 tbsp
  • Onion chopped 1
  • Garlic chopped 3 – 4 cloves
  • Carrot chopped 1
  • Celery stick chopped 1
  • Beef mince 300 gm
  • Tomatoes boiled 2
  • Oregano 1 tsp
  • Red grapes juice ½ cup
  • Tomato paste 2 tbsp
  • Salt to taste
  • Black pepper powder ½ tsp
  • Spaghetti boiled ½ packet
  • Parsley chopped as required
Method
  • Heat 2 tbsp oil in a wok, add 3 – 4 cloves of chopped garlic and 1 chopped onion. Sauté till softened.Now add 1 chopped carrot and 1 chopped celery stick, fry for 1 – 2 minutes. Then add in 300 gm beef mince, fry well for 3 – 4 minutes till water dries.Now add oregano, red grapes juice, tomatoes paste and boiled chopped tomatoes. Cover and cook on very low flame for 10 – 15 minutes.Then remove lid, add salt to taste and ½ tsp black pepper.Spread ½ packet of boiled spaghetti in a serving platter, top with mince meat sauce.Garnish with chopped parsley and serve hot.
