PLAIN PULAO AND MUTTON LAMB VINDALOO

PLAIN PULAO AND MUTTON / LAMB CURRY
PLAIN PULAO / PILAF
Serves 6 Preparation time 45 minutes
Ingredients2 cups Basmati Rice or any other rice
2 Bay leaves
4 Cardamoms
3 Cloves
1 small stick cinnamon
2 teaspoons ginger garlic paste
1/2 teaspoon turmeric or a few strands of saffaron
2 teaspoons chopped mint
100 grams cashew nuts
Salt to taste
½ cup ghee
Heat the ghee in a pan or rice cooker and fry the Cashew nuts, bay leaves, and spices for some time. Remove the cashewnuts and keep aside. Add the ginger garlic paste and mint to the ghee and sauté for a few minutes. Add the washed rice, mint and turmeric / saffaron and stir fry for 3 or 4 minutes. Add the salt and 4 cups of water and cook till the rice is done.
Garnish with fried Cashewnuts and browned onions Serve with mutton or Lamb Vindaloo and salad.

MUTTON / LAMB VINDALOO
Serves 6 Preparation Time 45 minutes
Ingredients
½ kg mutton /lamb cut into medium pieces
3 big tomatoes pureed or chopped
2 big onions chopped
3 medium potatoes pealed and cut into quarters
3 tablespoons oil
Salt to taste
1 teaspoon mustard powder
2teaspoons chillie powder
1teaspoon cumin powder
1 teaspoon pepper powder
3 teaspoons garlic paste
3 tablespoons vinegar
½ teaspoon turmeric powder
Wash the meat and keep aside.
Heat oil in a suitable pan or pressure cooker and fry the onions till golden brown. Add the garlic paste and fry well. Add the chillie powder, turmeric powder, cumin powder, mustard powder, pepper powder and a little water and fry well till the oil separates from the mixture. Add the tomato puree and salt and fry for some more time. Now add the meat, potatoes and vinegar and mix well. Keep frying on low heat for about 3 minutes. Add 2 cups of water (add more water depending on how much gravy is required) and cook till the mutton /lamb is tender and the gravy thickens (If cooking in a pressure cooker, turn off the heat after 15 minutes).

Mutton do piyaza

Ingredients
- Mutton ½ kg
- Onion sliced 4
- Yogurt 250 gm
- Bay leaves 2 to 3
- Whole red chili 8 to 10
- Green chilies chopped 8 to 10
- Ginger chopped 1 tbsp
- Garlic chopped 1 tbsp
- All spice powder 1 tsp
- Whole cardamom 3 to 4
- Cinnamon 3 to 4 sticks
- Whole black pepper 1 tsp
- Clarified butter 1 cup
- Salt to taste
Method:
- In a pan add 1 cup clarified butter with 3 to 4 big cardamom, 2 to 3 bay leaves, 8 to 10 whole red chilies, 1 tsp whole black pepper and 3 to 4 cinnamon sticks to cook till it crackle. Then add ½ kg mutton and cook till it turns golden brown. Then add 1 tbsp chopped ginger and 1 tbsp garlic to cook for 2 to 3 minutes. Then add as required water so meat tender. When meat tender add 4 sliced onion, 1 tsp all spice powder, 8 to 10 green chilies and salt to taste and cook till oil separates from gravy. Dish it out and serve.

Mutton Paye

Ingredients
- Mutton paye 6 (roasted)
- Brown onion grinded ½ cup
- Ginger garlic 2 tbsp
- Coriander powder 3 tsp
- Chili powder 3 tsp
- Allspice 1 tsp
- Turmeric ¼ tsp
- Salt 2 tsp
- Yogurt ½ cup
- Mix whole spices 1 tbsp
- Oil ½ cup
- Green chilies for garnish
- Coriander leaves for garnish
- Lemon slices for garnish
- Ginger slice for garnish
Method
- Heat oil add whole spices, ginger garlic paste, chili powder, coriander powder, turmeric, salt, fry well add in yogurt, fried onion and paye, fry well add 6 cups water, cover and cook till soft and tender. Lastly add allspice powder, serve sprinkled with coriander leaves, ginger slice, green chilies and lemon.

Podimas with Soy Chunks Vegetarian version of Mutton Podimas


This soy chunks used is precooked I guess with salt,garlic and chili.I tasted it before cooking and found all tastes in small quantities.So we should be careful while adding salt and hot taste while cooking.It is soy chunks cooked and crushed.

Ingredients
Onion- one (minced)
Green chili-2
Tomato puree -1/2 cup (I used Hunts crushed tomatoes)
Ginger garlic paste- 1 teaspoon
Red chili powder- 1 table spoon (use as per your requirement)
Garam masala powder-1/2 teaspoon (optional)
Kadalai paruppu (channa dhal) -3 table spoons (¾ cooked) cook it for 10 minutes in a kadai or pressure cook for one sound or 6 minutes

For seasoning
Cinnamon-2 small pieces
Clove-2
Bay leaf-small piece
Fennel seeds-1 teaspoon (many wont like this taste but this should be added to all non veg since it helps in digestion)
Curry leaf-little
Procedure
Keep the frozen packet out for 3 to 4 hours till it comes to room temperature.Those who go for work can keep it in the regular fridge in the morning if they cook in the evening or at night if cooked in the morning.
Keep the kadai in the stove.In one table spoon of oil season the curry with items given in ‘for seasoning’.Now add the minced onion and green chili and sauté well . Add ginger garlic paste and mix well .Now add the garam masala powder and chili powder and the salt required. Remember the soy chunks already contains some salt taste. Saute well. Add the soy chunks and mix well and cook for 5 to 6 minutes with the kadai closed in slow fire. Now open the kadai and add the tomato puree and cook with the lid open till all water content disappears and try to roast it in slow fire to the desired consistency. If you want the dry version add the cooked channa dhal and mix well. If you want to use it for chappathi then don’t dry roast it. If it is for chappathi switch off little early that is sometime after adding tomato puree. Those who don’t mind adding an egg can add it to the dry version.It will increase the taste.
Try this recipe and find out different recipes out of this. I found it being used along with vegetables in noodles and tasted similar to chicken.
