ANGLO INDIAN DINNER THE TAJ WEST END
Mr. Vir Sanghvi, the noted Editor and Television Celebrity is in Bangalore in connection with the historic event of The Taj West End Bangalore celebrating 125 years of the West End this year.
He and Mrs. Sanghvi are presently guests of The Taj West End Bangalore. The Taj West End as part of the celebration is showing Colonial Anglo-Indian Food and Mr. and Mrs. Sanghvi were treated to a special Anglo-Indian Dinner on the 20th September 2012 at THE TAJ WEST END (MYNT RESTAURANT).
I was requested by Executive Chef Sandip Narang of the Taj West End to formulate a special Menu of popular and tasty Colonial Anglo-Indian Dishes and personally supervise the preparation of these dishes that were served to Mr. and Mrs. Sanghvi at Dinner last night.
Needless to say that both of them thoroughly enjoyed the delicious spread of Anglo-Indian Coconut Rice, Mince Ball Curry, Colonial Pepper Chicken, Railway meat curry, Bengal lancer’s Shrimp Curry, Prawn Fry, Liver and Onions, Pan fried Pepper Fish, Fish Kedgeree, Seer Fish in a Tangy Gravy, Pork devil Fry, Potato Chops, etc, together with a selection of Anglo-Indian pickles, relishes and chutneys. Dessert was a selection of old Anglo-Indian favourites such as Bread Pudding, open Pineapple tarts and miniature Apple Crumble together with Custard sauce. They were truly appreciative of the wonderful taste of Anglo-Indian Food and the rich culinary history behind each dish that I explained and talked about.

I also presented them with a few of my Anglo-Indian Recipe Books which was graciously received.
My sincere, grateful and special thanks to Executive Chef Sandip Narang and the Taj West End Bangalore for giving me this wonderful opportunity of sharing my expertise in Anglo-Indian Cuisine and being part of the team on this occasion.

All credit for the wonderful Anglo-Indian Meal should be given to all the team at the MYNT Kitchen in particular Chefs Bharat Kapoor, Abhijit Mallick, Sukesh, Phillip, Parimal, Pranav, Susainathan, keshav Rao, Srinivas, Manoj, Niranjan, Manju, Santosh, Nanda, Melvin, Jose, Devandra, Ramachandra, Milton and all the other staff who supported me and helped to make this a success. Post Christmas Turkey Dinner
Happy New Year! Welcome to the first installment of "Amys Dinner", a diary of what I eat for dinner every single day for 365 days.
A few days ago I realized that I spent a substantial amount of time everyday trying to figure out what to have for dinner that night. I noticed that I, and most everyone else I know, also asked others what they were going to eat that evening. This could be attributed to habitual conversation, but I believe that it is in hopes of finding some inspiration. Out of those conversations, an idea was born to post what I eat for dinner for an entire year!
Most evenings I cook for myself, and while I think recipes are a great resource for inspiration and definately the place to start for those just learning about the kitchen, the way to become a really great cook is to free yourself from the recipe. Learning cooking techniques and ways that ingredients can be combined sets you on the right path to making really tasty foods. Therefore, most of the meals I make are original and not based on a recipe. As a result, most of the time my dinner is pretty delicious, however, it is possible to have a flop. If something a make is a real stinker, I will tell you. At the end of this experiment, in 365 days, I hope to have a collection of several hundred really great dishes (stinkers excluded) and will compile the recipes in a cookbook. I hope you will check in with me daily to find some inspiration from what I have for dinner, then go and create a delicious meal for yourself or for your family and guests.
Now, onto "Amys Dinner" January 1, 2010. We usually have turkey for Thanksgiving and Christmas dinner, but this year we decided to experiment with a Rib Roast for Christmas dinner. It was delicious, but I was cheated out of the leftover turkey sandwich, my favorite part! So, last night I decided to make a mini version of the turkey dinner so I could enjoy a turkey sandwich with cranberry sauce and mayo for lunch today.
I purchased a half of a turkey breast from the grocery store (looks like a giant chicken breast) for approximately $7.00. In the freezer I had several bags of leftover cranberries from baking during the holidays, so I made an easy cranberry sauce by cooking the berries, sugar, water and fresh orange juice for approximately 10 min. I chilled it in the refrigerator for about an hour prior to eating. Turkey dinner must have stuffing or dressing in this case, since it obviously was not stuffed into the turkey. For this I purchased a bag of Country Style Pepperidge Farm Stuffing and mixed it with a sautee of onions and celery with butter, half a box of chicken stock, an egg and some poultry seasoning. Bake for 20 min. covered and then 10-15 min. more uncovered. Simple but delicious and a much healthier alternative to the box of stuffing mix! Obviously, gravy is a must. I melted approximately a tablespoon of butter with a tablespoon of flour and cooked it long enough to get rid the raw flour taste and wisked in the remaining half box of chicken stock. Cook over a simmer for 10 mins. The turkey came out of the over after approximately 1hr. 45 min. of cooking and I let it rest for 15 mins. before carving. I added the drippings which accumulated on the plate to the gravy as well.
Now, the final side dish which is necessary to make my turkey dinner complete is a little weird to most, but not for those of us who grew up in Baltimore, MD. A side of sauerkraut is common when eating any poultry dinner, but an absolute requirement with turkey (I guess its just a regional thing). I usually cook the sauerkraut with pork, beer and apples for several hours for holidays, but like I said, this is the mini version, so I simply heated up a can of sauerkraut. That palet cleansing bite that the kraut lends to this otherwise rich meal is so good!
Thats it! Heres the final result. It was delicious and really simple.

Sicilian Sweet and Sour Meatballs and The Dinner Divas
If you ever moved to a new state you know how difficult it is to make new friends. Its hard enough on children but eventually they make friends in school, during sports and other after school activities. If youre an adult its even harder. There really isnt anywhere to meet people if you have moved to a state where you dont know more than one person. This was my problem when I moved to New Jersey with Steve. I decided to be brave and reach out to people on the Internet and join some groups. Im a busy girl these days. The group that is closest to my heart is "The Dinner Divas". We are a group of young women who get together once a month and eat wonderful homemade food that we have made. Each month one of us hosts a themed meal of our choice and the rest of the members contribute an appetizer, dessert or wine. Ive made some great friends through this group and I hope its something that well continue for years. Id like to take this time to thank my Dinner Divas friends, you guys are great! I truly appreciate the commitment that everyone makes to the group each month and always look forward to seeing my friends!

This past weekend Janet hosted a Sweet and Savory themed dinner. My job was to make an appetizer so I decided on Sweet and Sour Meatballs. A friends mother used to make these but I never made them myself and didnt have a recipe. I looked it up online and found a recipe from Sicilian Home Cooking. Check it out. I have adapted the recipe to meet my tastes which was my basic meatball recipe with some raisins and pine nuts mixed in to continue the sweet and savory theme and used their directions for making the sweet and sour onions. I made them Swedish meatball size but of course they can be made larger.
The result was awesome! Im really excited about this recipe and I plan on making this more often! So, without further adieu, here is my recipe!
Sicilian Sweet and Sour Meatballs
Ingredients:
Meatballs:
1 lbs ground beef (85% lean)
1 small onion, chopped
3 cloves garlic, minced
¼ cup Parmesan cheese
¼ cup milk
1 eggs
salt and pepper, to taste
½ cup bread crumbs
Garlic powder and onion powder
1 handful raisins
1 handful of pine nuts
Sweet and Sour Onions:
2 medium onions, thinly sliced
2 tablespoons extra virigin olive oil
Salt and pepper to taste
3 tablespoons red wine vinegar
1 ½ tablespoons sugar
2 tablespoons water
Sprinkle beef with garlic powder and onion powder. Just enough to lightly cover meat. Then add all ingredients, mix to combine. Form meatballs and fry in olive oil. Set aside and drain on paper towels.
Add onions to pan and season with salt and pepper. Sauté onions in extra virgin olive oil on low heat until they become tender. Do not allow them to brown.
Stir in vinegar, sugar and water.
Return meatballs to pan and gently toss in sauce. Let them cook over medium-low heat for 5 minutes. Transfer to a serving dish and cool. Serve at room temperature.
