sweet paratha andhra bobbatlu Indian Sweet Bread

Ingredients:
For inner stuff (Purnam):
Jaggery (grated)/ Sugar -1 Cup
Moong dal (pesara pappu) / chana dal cooked -1 cup
Elachi (Cardamom) powder (Tip: grind by adding 2 spoons of sugar) -1/4 tea spoon.
For Chapati :
Maida - 1 cup
Rice flour -2 tea spoons
Sujii/ bombay ravva/ Upma ravva - 1 table spoon
water- 1 cup
salt - to taste

Others:
Plastic cover (Zip lock bag/ Aluminium foil)--->surface to roll the dough.
Method:
- Cook chana dal in pressure cooker for 4 whistles.
- Jaggery + Dal + Elachi powder--> Grinder/ processor---> smooth paste
- 2 tbl spoon oil + all flours + salt ---> Mix well--->make like chapati dough (wait for 10min)
- Take a lemon size ball of dough--->keep some oil on plastic bag and roll the dough on the bag to make chapati.
- Take a double the lemon size inner batter and wrap it with chapati. (now it shoud apper like boiled egg with two layers).
- Press gently with hand to make flat disc.
- Heat pan and apply oil and fry the paratha on both sides.
- Serve with ghee (optional) and Enjoy with your loved ones.

Savoury sweet potato bake with a peanut crumb


Ideas lurk everywhere. The other day I was at my sons classmates house after school as the kids wanted to play and I was hanging around in the kitchen with the parents, drinking tea and chatting up. The dad was preparing an early dinner and one of the dishes was a savoury starchy bake using potatoes and sweet potatoes. Im not a big fan of sweet potatoes, but Ive always loved the Tamil style sweet potato stir fry curry with sambar-rice or in desserts (yes, brownies!) or randomly in some other dishes. I find that sweet potatoes that we get here need a lot of flavour boost to taste great.
This time, I wanted to try out a savoury bake with them. I had noticed our friend preparing a kind of béchamel sauce to go on top of the layered sweet potatoes, topped with cheese. But since we had no cheese at home, I had to improvise with something else. And thats how the peanut crumb happened. It did provide a fantastic texture to the otherwise melty dish, not to mention upping the protein content of the dish.


Recipe for Savoury Sweet Potato Bake
Serves 3-4
Ingredients
2 medium sized sweet potatoes
1/2 cup fresh or frozen green peas
2 cups milk
1 tbsp butter
1.5 tbsp flour
1/2 tsp salt
1 tsp dried rosemary, crushed
1/2 tsp grated nutmeg
1-2 tsp freshly ground black pepper
1/3 cup roasted peanuts, skins removed (you could use ready available roasted salted peanuts too)
Directions
- Preheat oven at 180 C.
- In a large pan, bring 2 litres water to a boil with 1 tsp salt.
- In a mixer / food processor pulse the peanuts till coarsely crumbed.
- Meanwhile, scrub the sweet potatoes well with a scrubber and lots of water to remove all the soil. Do not peel. Finely slice them, and add them to the boiling water. Add the peas too.
- Check in 4 minutes, if they are partially cooked. If yes, drain the water in a colander and keep aside the veggies.
- In a saucepan, heat butter. Add flour and make a roux until all the flour is absorbed in the butter and turns lightly aromatic. Add the milk with constant whisking. If a few lumps remain, its okay with this dish. Add the salt, dried rosemary, pepper and nutmeg.
- Lightly grease a mid-sized baking dish. Place the partly cooked sweet potato slices and peas, gently flattening them down. Sprinkle some pepper over the top.
- Add the sauce, lightly smoothening it out with a spatula.
- Top with peanut crumbs.
- Place in the middle of the oven for 30 minutes or so.
- Serve warm with a salad or a soup.
Notes
Feel free to try with other vegetables, similarly sliced - eg: Potatoes, carrots, turnips etc.
If you wish, you could add chilli flakes or chopped chipotle chillies to make this dish spicier. This recipe turns out reasonably seasoned but not spicy at all, suitable for kids of all ages.
You could substitute the peanut crumb with a mix of bread crumbs and grated cheddar. Im sure that tastes better :)
Leftovers can be warmed in the microwave for 30 seconds and had the following day.

Sicilian Sweet and Sour Meatballs and The Dinner Divas
If you ever moved to a new state you know how difficult it is to make new friends. Its hard enough on children but eventually they make friends in school, during sports and other after school activities. If youre an adult its even harder. There really isnt anywhere to meet people if you have moved to a state where you dont know more than one person. This was my problem when I moved to New Jersey with Steve. I decided to be brave and reach out to people on the Internet and join some groups. Im a busy girl these days. The group that is closest to my heart is "The Dinner Divas". We are a group of young women who get together once a month and eat wonderful homemade food that we have made. Each month one of us hosts a themed meal of our choice and the rest of the members contribute an appetizer, dessert or wine. Ive made some great friends through this group and I hope its something that well continue for years. Id like to take this time to thank my Dinner Divas friends, you guys are great! I truly appreciate the commitment that everyone makes to the group each month and always look forward to seeing my friends!

This past weekend Janet hosted a Sweet and Savory themed dinner. My job was to make an appetizer so I decided on Sweet and Sour Meatballs. A friends mother used to make these but I never made them myself and didnt have a recipe. I looked it up online and found a recipe from Sicilian Home Cooking. Check it out. I have adapted the recipe to meet my tastes which was my basic meatball recipe with some raisins and pine nuts mixed in to continue the sweet and savory theme and used their directions for making the sweet and sour onions. I made them Swedish meatball size but of course they can be made larger.
The result was awesome! Im really excited about this recipe and I plan on making this more often! So, without further adieu, here is my recipe!
Sicilian Sweet and Sour Meatballs
Ingredients:
Meatballs:
1 lbs ground beef (85% lean)
1 small onion, chopped
3 cloves garlic, minced
¼ cup Parmesan cheese
¼ cup milk
1 eggs
salt and pepper, to taste
½ cup bread crumbs
Garlic powder and onion powder
1 handful raisins
1 handful of pine nuts
Sweet and Sour Onions:
2 medium onions, thinly sliced
2 tablespoons extra virigin olive oil
Salt and pepper to taste
3 tablespoons red wine vinegar
1 ½ tablespoons sugar
2 tablespoons water
Sprinkle beef with garlic powder and onion powder. Just enough to lightly cover meat. Then add all ingredients, mix to combine. Form meatballs and fry in olive oil. Set aside and drain on paper towels.
Add onions to pan and season with salt and pepper. Sauté onions in extra virgin olive oil on low heat until they become tender. Do not allow them to brown.
Stir in vinegar, sugar and water.
Return meatballs to pan and gently toss in sauce. Let them cook over medium-low heat for 5 minutes. Transfer to a serving dish and cool. Serve at room temperature.
