Mustard Almond Chicken Salad
Ingredients
- Boiled chicken 250 gm
- Roasted almond 125 gm
- Green capsicum 1
- Ice berg 1
- Carrot 2
- Black pepper ¼ tsp
- Mustard paste 2 tsp
- Vinegar 2 tbsp
- Mayonnaise 6 tbsp
- Salad leaves as required
- Salt to taste
Method
- Boil 250 gm chicken and cut into small cubes, also cut 1 capsicum and 2 carrot in slices.Chop 1 piece of ice berg or salad leaves.In a bowl put together chicken cubes and all the vegetables. Mix well.
- Add 6 tbsp mayonnaise, 2 tsp mustard paste, ¼ tsp black peeper, 2 tbsp vinegar and salt to taste. Mix well.Now put this mixture in a platter, garnish with salad leaves. Top with 125 gm roasted almonds. Serve chilled.
